Recipe: My Fruity Veggie Nut Bread

Any idea what this healthy and scrumptious thing is that I made?

I've been cooking for people since I was 12 and I LOVE combining my decades-long cooking skills with my accumulated knowledge of food as medicine, for which I draw mostly from my studies and research in Taoism, ancient Traditional Chinese Medicine, holistic wellbeing concepts gathered from the Edgar Cayce readings database, as well as from a few notably healthful diets, such as the Mediterranean diet, to come up with what I call:

Qi~Fusion cooking :~)

Qi (aka Chi or Ki) is what has been known for thousands of years as "life force" or "universal energy".  I strive to design recipes that are chock full 'o Qi, while, of course, being able to pass my highest Yumminess Bar.

And here's my latest healthy concoction... 

Well... besides the traditional icing I added at the end, that is. Hey... I was feeling like a little icing. Can't blame a girl for wanting a little sugar sometimes.. 

But get this--this is a fruit, carrot & nut (and many more things) loaf!

I love making this, and then freezing individually bagged slices so I can have a delicious, protein-packed snack whenever.

I worked to develop a yummy recipe that really does pack a protein punch:

It has walnuts, chia seeds, and ground flaxseed in it, besides.. get this...

Bananas, coconut, carrot, pineapple, and a few dark chocolate chips... oh yeah....

AND if you decide to forgo the icing I added on top to this one... it is sweetened with only raw honey :~)

It's also made with whole wheat flour, and though you can use any milk you like, I used oat milk with Lion's Mane and Cordyceps in it, so it has mushrooms, too LMAO!! 

RECIPE:  My Fruity Veggie Nut Bread

Dry Ingredients

  • 1 ¾ cups whole wheat flour
  • 1 tsp cinnamon
  • 1 teaspoon baking soda (make sure it’s not baking powder… there IS a difference)
  • 1/2 teaspoon salt
  • 2 tablespoons chia seeds
  • 2 tablespoons ground flax seed

Wet Ingredients

  • 2 eggs (if you want to make this vegan, substitute a chia “egg” by combining about a tbsp of chia seeds with 3 tbsps of hot water in a small bowl and setting aside for 5 minutes per egg.)
  • 6 tbsp Ghee (or coconut oil)
  • 4 tbsp raw honey (or maple syrup)
  • 1/4 cup milk (any milk you like)
  • 1 teaspoon vanilla extract
  • 3 large ripe bananas, mashed
  • 2 small or 1 large shredded carrot
  • ½ cup crushed pineapple, drained
  • ½ cup of shredded coconut

Fold-ins

  • 1 cup walnuts (plus a few more to sprinkle on top if you decide to decorate it)
  • ½ to ⅔ cup of dark chocolate chips (skip or use cacao nibs instead if sugar is a concern)
  • ANYTHING you like... c/raisins, other nuts... be creative :~)

Directions:

Preheat oven to 350 degrees. Spray or grease and flour a loaf pan.

*A little trick I like to use is to mix a bit of cinnamon--and if I’m really feeling cheeky, a bit of brown sugar, too--into the flour before sprinkling it over the greased loaf pan, and I use ghee.

Combine whole wheat flour, cinnamon, baking soda, and salt in a large bowl and mix well.
